- Place squid on clean cutting surface.
- Cut off the head with a sharp knife.
- Cut off the tentacles.
- Cut off the fin.
- Pull out the gladius (or pen) from the mantle. This is the clear,
plastic-looking blade that runs the length of the body.
- Pull out the rest of the innards.
- Rinse tentacles, mantle (body cavity), and fins in clean water. Be
sure the body cavity is clean of all body fluids, membranes, and innards.
- Cut the body into rings.
- Chop up the tentacles and fins to the desired size.
