Cleaning Squid for the Novice

  1. Place squid on clean cutting surface.

     

  2. Cut off the head with a sharp knife.

  3. Cut off the tentacles.

  4. Cut off the fin.

  5. Pull out the gladius (or pen) from the mantle. This is the clear, plastic-looking blade that runs the length of the body.

  6. Pull out the rest of the innards.

  7. Rinse tentacles, mantle (body cavity), and fins in clean water. Be sure the body cavity is clean of all body fluids, membranes, and innards.

  8. Cut the body into rings.

     

  9. Chop up the tentacles and fins to the desired size.

  10. Use in a recipe of your choice! Bon Appetite!
